Some recipes are just meant to become family traditions, and this Green Goblin Garlic Bread is definitely one of them. For over 20 years, this has been the must-have dish at our Halloween celebrations, and honestly, it wouldn't be Halloween without it.
Let me tell you the story behind this recipe. Years ago, when my kids were little and I was always looking for creative ways to sneak vegetables into their meals, I came across a Rachel Ray recipe called "Gobble 'Em" bread. But when I told my kids what we were having, they heard "Green Goblin bread" instead. The name stuck, and suddenly this spinach-filled garlic bread became the coolest, most Halloween-appropriate thing ever. They had no idea they were devouring spinach with such enthusiasm!
I adapted Rachel's recipe over the years, and it's become our Halloween staple. It's loaded with butter (because let's be honest, that's the secret), lots of garlic, generous amounts of parmesan cheese, and of course, plenty of spinach that gives it that perfect spooky green color. The best part? My kids are adults now, and they still request this every single Halloween. It's become one of those recipes that holds so many memories, and I love that it continues to be part of our celebrations.

Ingredients
3 cups fresh baby spinach
1 cup grated parmesan cheese
1 stick butter, softened
7 cloves garlic
1 loaf French or Italian bread, halved
Pinch red pepper
EVOO
Salt & pepper to taste
Instructions
Place oven shelf abut a 1/4 from top of oven. Set the oven to 425 degrees and preheat. Put the halved loaf on a cookie sheet.
Put butter, parmesan and garlic in bottom of food processor. Push spinach over and add red pepper and season with salt and pepper.
Process mixture until smooth. Drizzle in oil as needed to create smooth topping. You may need to scrape down the bowl several times to get the mixture to combine.
Spread mixture on each half of bread evenly.
Bake for 9 minutes. Check at 7 minutes to ensure bread does not burn.
Slice bread into 2-3 inch pieces. Enjoy!
