About the Recipe

This is the dip that started it all for me. I've been making this easy Mexican corn dip for years, and without fail, it's the first thing to disappear at every party, potluck, and gathering. The recipe gets requested constantly because it's that perfect combination of creamy, flavorful, and utterly addictive. Made with canned Mexi-corn and a few simple ingredients, it comes together in minutes but tastes like you spent hours in the kitchen.

Here's the thing though—you absolutely must eat it with Fritos Scoops. Trust me on this. I've tried it with other chips, but there's something magical about how the corn flavor in the Fritos complements the dip. The sturdy scoop shape is perfect for getting every last bit, and the salty crunch is the ideal contrast to the creamy dip. Fair warning: people will hover around this bowl, so you might want to make a double batch!

Ingredients

  • 2 cans of Mexi-corn, drained (alternatively, you can use two cans of corn niblets, but you should add diced red pepper to your dip)

  • 1 can of diced tomatoes with peppers, well drained (I prefer Rotel mild, but you can choose spicy if you prefer more heat)

  • 1 cup mayonnaise

  • 1 cup sour cream

  • 1 tsp chili powder

  • 1/2 teaspoon cumin

  • 1/8 teaspoon cayenne (more if you want more heat)

  • Lime juice, about a tablespoon

  • 8 oz. of shredded cheese (I prefer a mix of colby jack and cheddar, but you can use any Mexican cheese blend or simply cheddar)

  • 2 green onions, chopped

  • Bunch of cilantro, chopped

  • Season with salt and pepper generously, and taste as you proceed.

Instructions

Step 1


Thoroughly drain the corn and diced tomatoes, as excess moisture is undesirable in this dip.



Step 2


Mix mayonnaise, sour cream, seasonings, and lime juice thoroughly.



Step 3


Add cheese, green onions, corn, and tomatoes to the sauce. Carefully stir in about a cup of cilantro. Season with salt and pepper to your liking. Garnish with cilantro and paprika. Cover with plastic wrap and refrigerate for a few hours or overnight for optimal flavor. If the dip appears dry, stir in a splash of milk before serving. Serve with Fritos Scoops!
