These English Muffin Breakfast Pizzas have officially earned their place on our family's 'Yummers' list—and for good reason! After serving them during the holidays, they've become a go-to recipe for special occasions and busy mornings alike. The secret? English muffin halves are soaked in a seasoned egg mixture just like French toast, but with a savory twist thanks to my signature 'Rise & Shine' seasoning. Once they've absorbed all that eggy goodness, they're topped with crumbled breakfast sausage, melted cheese, and fresh diced red peppers for a pop of color and sweetness.

What makes these truly brilliant is how easily they feed a crowd—ideal for Thanksgiving or Christmas morning when you want something hearty and delicious without spending all morning in the kitchen. You can prep them ahead, bake them all at once, and let everyone grab their own mini breakfast pizza. You can even freeze a bath and easily warm them up! They're filling, flavorful, and guaranteed to become a family favorite.

Ingredients

  • 1/2 pound breakfast sausage

  • 4 eggs

  • 3 tablespoons milk

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 teaspoon 'Rise & Shine' seasoning* or Italian seasoning

  • 6 English muffins separated

  • 1 cup shredded cheese (cheddar or a blend)

  • 1 red pepper, seeded and diced

Instructions

Step 1


Set the oven to 400 degrees and allow it to preheat. Line a large baking sheet with parchment paper.



Step 2


Split all English muffins in half. In a medium skillet, cook the sausage until it is no longer pink. Drain the grease and set it aside.



Step 3


In a bowl, combine eggs, milk, salt, pepper, and seasoning mix by whisking them together. Immerse each half of an English muffin in the egg mixture, ensuring both sides are coated, then arrange them on the prepared baking sheet.



Step 4


Place sausage, cheese, and red peppers on each half of the English muffin.



Step 5


Bake for 15 minutes, or until muffins are golden and cheese is melted. Serve immediately or allow to cool then freeze (reheat in microwave for 45 seconds).



Notes

  1. 'Rise & Shine' seasoning - I have been making this seasoning for my husband to add to his daily egg breakfast for awhile. It is a great flavor profile for any egg dish. I quadruple this recipe and put it in a jar where he can use it every day!

  1. Spice it up - You could easily add some hot sauce to this like 'Cry Baby Craig's' or 'Cholula' which are two of my husband's favorites!
