About the Recipe
This is one of the first recipes I got from my mother-in-law, and it’s been a favorite ever since. If you look closely at the photo in the blog post, you might spot the original recipe card—worn, stained, and well-loved, just like the dish itself. We call this a “cabin recipe” because it’s perfect for feeding a crowd, and it’s always a hit with everyone—from kids to grandparents. Want to kick it up a notch? Add a little spice (for those of you who aren't from Minnesota)! Take a look at the notes for a few tips.

Ingredients
10 boneless chicken breasts (about 2 1/2 pounds), cut into 1 inch pieces
2 pkgs (1 oz.) Lawry's Taco Spices & Seasoning packets
2 cans (14 1/2 oz.) whole tomatoes, undrained, cut-up
3 cups (12 oz.) shredded sharp cheddar cheese
1 can (7 oz.) diced green chilis, drained
1 can (12 oz.) whole kernel corn, drained
1 pkg (8 1/4 oz.) corn muffin mix
2 eggs
1/4 cup sour cream
Instructions
Step 1
In a large bowl, toss chicken cubes with taco seasoning and tomatoes. Mix well. Add one cup of cheese. Spread mixture evenly into 13 x 9 x 2 greased baking pan or casserole dish.
Step 2
Spoon green chilis over chicken mixture. Sprinkle with remaining cheese then set aside.
Step 3
In a separate medium bowl, combine corn, muffin mix, eggs and sour cream. Stir well. Drop by rounded spoonful on top of chicken mixture in casserole. Spread as needed.
Step 4
Bake in 350 degree oven for 60 minutes. Remove from oven then let stand for 20 minutes before serving. Serve with black beans.
Notes
1. Taco seasoning
While the original recipe calls for Lawry's taco seasoning, you can use your favorite seasoning or a homemade version. These days I like to make my own so it's not too salty. Here is my quick taco seasoning recipe:
6 Tbs. chili powder
2 Tbs. ground cumin
3 tsp. smoked paprika
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. black pepper
1/2 tsp. salt
1/8 tsp. cayenne (more if you want more heat)
2. Green chilis
While this recipe calls for green chilis, I prefer fire-roasted green chilis. I think they have better flavor!
3. Corn muffin mix
This is going to sound like an advertisement, but I promise it's just my opinion! My mother-in-law would use the old-school Jiffy corn bread muffin mix for this recipe. It's fine....but, I love the Krusteaz brand honey corn bread mix! There is no comparison and my corn muffin mix of choice!! Do it - no compromises!
