Spring in my step!

There’s something special about living in a place that experiences all four seasons. Summer, of course, is celebrated for its warmth and all the “up north” adventures it brings (more on that in future posts!). Fall is cherished for its crisp evenings and vibrant leaves. Winter can be a tough one here in Minnesota—if not for the festive holidays, ice and snow celebrations, and plenty of flights to warmer destinations!
But spring… spring has its own kind of excitement.
And it’s not just us humans who feel it. My dogs and chickens seem to know it’s spring too. There’s a definite pep in their step. The dogs want to stay outside, happily basking in the afternoon sun, and the chickens run around their yard chasing each other without a hint of frostbite fear.
For me, one of the best parts of spring is the food. The chickens start laying more eggs, which means quiche season is officially on—packed with asparagus and spinach, of course! I also love that we can finally uncover the grill and start easing into warm-weather meals.
This salad, for example, was a bright and tasty addition to our table—just the thing to break up the beige of winter comfort food and move toward the vibrant veggies of summer. I may have jumped the gun a bit and grabbed everything from the store instead of my garden, but it still tasted like sunshine.
So go ahead—step outside into your backyard or onto your patio, soak up a little Vitamin D, and treat yourself to some greens (and a bit of grilled meat, if your household is anything like mine!).
