Just toss everything into the slow cooker, walk away, and let it do all the work while you actually enjoy your weekend.
The secret to this soup's incredible depth of flavor is in the ingredients. Rotisserie chicken keeps things simple without sacrificing any taste, while roasted frozen corn adds a subtle sweetness that plays beautifully against the tangy green salsa. White beans give it a hearty, satisfying body, and a generous scoop of cream cheese melts into the broth to create something silky, velvety, and completely irresistible.

Ingredients
2 cups shredded rotisserie chicken
2 15 oz. cans white beans, drained and rinsed
1 4 oz. can fire-roasted green chilis
1 cup of frozen corn (I strongly suggest using fire-roasted corn)
1 (12 oz) jar salsa verde or green enchilada sauce
1 cup salsa picante (such as Trader Joe's Salsa Autentica)
4 oz. cream cheese, room temperature
1 Tablespoon chili powder
1 tsp. cumin
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. salt and pepper
4-5 cups of chicken broth (add more for a soupier consistency)
1 cup shredded cheese
Toppings: shredded cheese, sour cream, tortilla strips or chips, red onions,
Instructions
Step 1
In a slow cooker, add all ingredients except 1 cup shredded cheese.
Step 2
Cover and cook on low for 4-5 hours or high for 2-3 hours.
Step 3
Halfway through cooking, add the cheese and stir to combine until all the cheese has melted.
Step 4
Pour the soup into bowls and add your choice of toppings.
Notes
Add some spice - For those who love a spicy kick, pour your favorite hot sauce over the soup along with your chosen toppings.
