It's become my go-to recipe for every Football Sunday because it's easy to make ahead, feeds a crowd, and never fails to score big with everyone at the table.

Ingredients

  • 1 container of roasted red pepper hummus (if you'd like to make your own, there's a quick recipe in the notes)

  • 1/2 English cucumber

  • Half a pint of cherry or grape tomatoes

  • 1/4 large red onion

  • Feta crumbles

  • Olive oil

  • Oregano


Accoutrements: Pita crackers, pita bread, crusty bread, celery, carrots, cucumbers

Instructions

  1. Spread your hummus on the bottom of a shallow bowl or plate with a rim

  2. Cut the cucumber into small cubes, slice the tomatoes into quarters, and finely chop the red onion. Sprinkle these over the hummus.

  3. Scatter the crumbled feta across the vegetables and drizzle with olive oil.

  4. Conclude by adding salt, pepper, and a sprinkle of oregano.

  5. Serve with crackers, pita chips or bread and veggies.

Notes

Homemade hummus: For a truly fresh taste, prepare your own hummus by blending the following ingredients: 1 can (15 oz) of chickpeas, drained and rinsed; 1 jar (12 oz) of roasted red peppers, drained; 1/4 cup of tahini; 2 garlic cloves; 2 tablespoons of lemon juice; 3 tablespoons of olive oil; 1/2 teaspoon of ground cumin; and salt and pepper to taste. Blend until smooth and drizzle with olive oil.
