Ingredients

  • 1 cup AP flour (plus more for dusting pan)

  • 1 1/2 tsp. baking powder

  • 1/2 tsp. kosher salt

  • 1 cup granulated sugar

  • 3 1/2 ounces almond paste

  • 1/2 cup salted butter, room temperature (plus more for coating pan)

  • 1 tsp. vanilla extract or vanilla paste

  • 2 Tbs. apple brandy

  • 3 eggs

  • 2 apples, sweet-tart such as Gala, Pink Lady or SweeTango

  • Cinnamon for dusting

  • Powdered sugar for dusting


Instructions

  1. Set the oven to 350 degrees to preheat. Grease a 9" cake pan with butter and then coat it with flour. Shake out any extra flour.

  2. In a bowl, whisk together the flour, baking soda and salt. Set aside.

  3. Using a stand mixer with a paddle attachment, blend the granulated sugar and almond paste until they are finely ground, making sure to scrape the sides as necessary. Incorporate the butter, vanilla, and apple brandy, mixing until thoroughly combined. Add the eggs one at a time, ensuring they are fully mixed in, which should take about 3 minutes.

  4. Mix the wet ingredients with the dry ingredients in the bowl, then pour into the prepared cake pan.

  5. Slice the apples thinly and arrange them in a circular pattern, beginning at the center and moving towards the edges. Dust with cinnamon.

  6. Bake cake on center rack for 1 hour or until cake is golden brown and set in the middle.

  7. Allow to cool then sprinkle with powdered sugar.

Notes

  1. Apple selection - Choose an apple that is somewhat sweet rather than tart for this recipe. Since this dessert isn't overly sweet, using a sweeter apple enhances its flavor.


  1. Go alcohol free - You can certainly withhold the apple brandy from the recipe and replace with apple juice or cider. It may have a slightly different flavor.
